A genuine dump-and-go dinner: chicken breasts go in the crockpot, a mixture of stuffing mix, sour cream, cream of chicken soup and a little broth gets spread over the top, and the whole thing cooks on low until the chicken is tender and the stuffing has set. Vegetables can go in the bottom of the pot underneath the chicken, or wrapped separately in foil if you'd rather keep things separate.
Ingredients
- 4 breastsboneless chicken breasts, salted and peppered
- 1 boxstove-top stuffing mix
- 113 gsour cream
- 1 cancondensed cream of chicken soup
- 60 mlreduced-sodium chicken broth
- vegetables of choice (carrots, onions, celery)
Method
Season the chicken breasts with salt and pepper and place them in the bottom of the crockpot. Add any vegetables underneath first if using.
~5 minIn a bowl, combine the stuffing mix, sour cream, cream of chicken soup and chicken broth.
~3 minSpread the stuffing mixture evenly over the top of the chicken.
~2 minCover and cook on Low for 6 to 7 hours, until the chicken is cooked through and juicy.
~390 minIf the stuffing looks dry once it's done, stir in a little more of the reserved chicken broth. Serve with a side salad or extra vegetables.
