Crockpot Taco Soup

Tom and Melissa's taco soup is about as dump-and-go as it gets: brown the beef, open nine cans, tip them in undrained, done. Their own recipe card says it converts to a slow cooker by heating everything through on low, which is exactly the crockpot version below.

This is about as close to true dump-and-go as crockpot cooking gets. Brown the beef, drain and rinse one can of black beans, then everything else, cans and all, goes into the pot undrained. The channel's own recipe notes it converts to a slow cooker by heating everything through on low, which is the version here: crockpot instead of hob, same nine cans.

To serve
  • tortilla chips, crumbled into the bottom of each bowl (add late)

  • shredded cheddar cheese (add late)

Method

  1. Brown the beef mince in a frying pan over medium heat, breaking it into chunks as it cooks, until no pink remains. Drain off the grease.

  2. Drain and rinse the black beans well in a colander. Add them to the crockpot along with the browned beef.

  3. Add the pinto beans, Great Northern beans, Rotel tomatoes, diced tomatoes, tomato sauce, corn and beef broth to the crockpot straight from their cans, undrained.

  4. Stir in the taco seasoning and Hidden Valley Ranch mix until combined.

  5. Cover and cook on Low for 3 to 4 hours, or High for 1.5 to 2 hours, until hot through and the flavours have melded. Stir occasionally.

  6. To serve, crumble tortilla chips into the bottom of each bowl, ladle the soup over the top, then finish with a dollop of sour cream and a scattering of shredded cheddar.

Frequently asked

Do I need to drain all the cans?
No. The black beans are the only ingredient you drain and rinse. Everything else, including the other beans, tomatoes and corn, goes in straight from the can, juice and all.
Can I double or triple this recipe?
Yes, easily, per the channel. It's a favourite for feeding a crowd or freezing in batches, just make sure your crockpot is large enough to hold the doubled quantity.
Does this freeze well?
Yes. The channel freezes it in batches in freezer bags laid flat, then reheats individual portions from frozen for a quick meal.
How spicy is this?
